The center of the champagne truffles is a smooth, creamy ganache delicately infused with cognac and covered with a layer of dark chocolate and cocoa powder. A ganache is the name for the chocolate center. It is a mixture of light cream and chocolate couverture. This blend can be plain or flavored (infusion of mint or cinnamon or even flavored with lemon zests or fresh coffee…).
